Oh woe is me…

My blog is lonely.

What a bore.

Blogging is a chore.

But here I try…

I crave a french fry?

 

All right, all right.  Enough with the forced attempt at creativity!  So poetry is  not my thing but I definitely am going to get back into blogging regularly.  I’m going to stretch myself a bit and maybe write about something interesting beyond what I most clearly love to do – photograph YOU!  While most days I can’t see beyond my computer and camera equipment, I do get excited about the little things that make my life easier and a bit more fun.  So Way Cool Wednesdays are going to be a fun way to share some stuff that I think is… well… WAY COOLl!  Get ready… get set…. GO.

Ok!  I’ve been STARVING making some healthy lifestyle changes lately  and if it’s one thing I’ve realized, it’s that cooking at home and healthy eating kind of go hand in hand.  And while I don’t particularly LOVE to cook, using pretty kitchen supplies makes it way more tolerable.  And since I’m home cooking right now – I thought I’d share this little baby as today’s Way Cool Thing!

And my favorite thing to make in it?

Chicken Enchilada Soup

Ingredients:

whole chicken, deboned and torn into pieces
2 cartons of organic chicken broth
1 can diced rotel tomatoes
1 can diced tomatoes
1 can enchilada sauce
1 onion – chopped
cilantro to taste

I’m kind of a “guesstimator” when it comes to cooking. (Let’s just pretend that’s a word.)  I just basically throw everything in the pot with this.  Maybe add a bit of water.  Then simmer until tasty!

Definitely a crowd pleaser and DEFINITELY what I crave when I’m sick.  The boys will even eat it… which is a miracle in itself.

    Oh yes! You can also use rotisserie chicken that’s already cooked! Easy peasy. :)
